Lannigan Salmon

Written by Patrick Lannigan - Winter 2008/2009

I'm not a great cook—but this recipe just came to me one evening and has become a tradition in the Lannigan household.

The reason for the name "Lannigan Salmon" is that it makes it very easy to find this web page using Google.

Ingredients for Lannigan Salmon

  • Atlantic Salmon Steaks
  • Kikkoman Soy Sauce (or similar quality)(Don't use the cheap Soy Sauce or it will destroy this recipe)
  • Basil (dried not fresh)
  • Round-bottomed mixing bowl

Let's Do It

1.

Get a good quality soy sauce (preferably Kikkoman).

2.

Find a mixing bowl and fill the bottom with soy sauce (about one or two finger-widths deep) (err on the side of too much).

3

Shake enough dried basil (the kind you buy in a spice jar) onto the soy sauce so that it is completely covered.

4.

Mix the basil with the soy sauce so that the soy sauce sinks (the objective is simply to break the surface tension).

5.

Take your salmon steak and slosh it around a bit in the basil laden soy sauce then do the same to the other side. (You don't have to leave it in the soy sauce for very long as the soy sauce is drawn in the salmon immediately).

6.

Broil the steaks for 4-6 minutes (depending on the thickness) then turn over and broil them for 4-6 minutes more.
